  • VINIFICATION: the grape’s fermentation starts in open barrels. Temperature is around 25° C controlled in order to keep aromas as raspberry and wild blackberry flavour. Pump-over’s are gentle. Effestive fermentation takes place for 15 days. In the middle of this process, must is pumped-over into stainless steel barrels. Wine is aged in oack 15 months

SENSORIAL ANALISYS

  • SCHIOPPETTINO: red ruby violet wine, very intense
  • AROMA: winy, full-bodied. Cinnamon, green pepper, mature red fruits, at the end mossy undergrowth
  • TASTE: very warm wine showing elegant tannin content; Mineral and freshness make the structure complete and armonic
  • PAIRINGS: red meat, wild meat, traditional dishes from Friuli Region, cured meat, aged cheeses
